Yellow Corn Cheesy Grits

Ingredients
- 3 cups water
- 1 cup heavy cream or milk
- 8 tablespoons unsalted butter, divided
- 1 tablespoon kosher salt
- 1 pound sharp cheddar cheese
- 1 cup grits
Instructions
- Combine water, heavy cream, 4 tablespoons of butter, and salt in a medium saucepan. Bring to a boil over medium-high heat. While it heats, grate the cheddar on the large holes of a box grater (about 4 cups).
- Stirring constantly, slowly pour in the grits. Reduce heat to low and simmer, stirring frequently, until the liquid is mostly absorbed and the grits are tender — about 20 minutes.
- Add the cheese and remaining 4 tablespoons of butter. Stir until melted and smooth. Taste and adjust salt as needed. Serve immediately.
